Hake is soft, white and still relatively cheap. It is a huge favourite in Spain. If you find it hard to get hold of, then pollack, cod, whiting, gurnard or sole will work well too. This is a simple combination of ingredients that makes a fine meal.
roast hake with parsley vinaigrette, aioli and boiled potatoes
SERVES 4
4 × 175 g/6 oz hake steaks, cut from the middle of the fish
2 tbsp good olive oil
plain (all-purpose) flour, for dusting
pinch of paprika
good waxy potatoes, freshly boiled, to serve
1 quantity aioli (see here ), to serve
